Mumbai-Style Pav Bhaji - The 12" Dosa Tawa
Ingredients
- 3 cups boiled & mashed vegetables (potatoes, peas, cauliflower, carrots)
- 2 finely chopped onions & 3 tomatoes
- 2 tbsp Pav Bhaji Masala
- The Hero: 50g Amul Butter
- 6-8 Pavs (Bread rolls)
- Garnish: Fresh coriander, lemon wedges, and chopped red onions.
Method
- Melt 25g butter in the center of the Tawa. Sauté onions until translucent, then add tomatoes and ginger-garlic paste.
- Add the Pav Bhaji masala and the mashed vegetables. Use a metal masher directly on the Tawa—the high-density iron is scratch-resistant.
- Once the bhaji is seasoned, push it to the outer edges of the Tawa. It will stay warm and continue to develop flavor due to the radiant heat.
- Add a dollop of butter to the empty center of the Tawa. Split the pavs and toast them until golden and slightly crisp.
- Serve the hot bhaji directly from the Tawa, topped with a squeeze of lemon and a mountain of chopped onions.
